Peel Hard-Boiled Eggs Under Running Water

The Problem

Hard-boiled egg shells stick and tear off in tiny pieces, destroying the egg white underneath.

The Hack

Tap the egg on the counter to crack the shell all over. Roll gently to loosen. Peel under a gentle stream of cold running water, letting water get between the shell and egg.

Why It Works

Water lubricates the membrane between the shell and egg white, reducing adhesion. The gentle pressure of running water also helps lift shell fragments away cleanly.

Pro Tips

  • Add 1 tsp baking soda to the boiling water — makes shells even easier to peel
  • Older eggs peel easier than fresh eggs — buy a week ahead for boiled eggs
  • After boiling, immediately transfer to an ice bath for 5 minutes
  • Steaming eggs instead of boiling also improves peelability
