Add a Tablespoon of Cornstarch to Cookies for Softness

The Problem

Your cookies spread flat and crisp instead of staying thick and chewy like bakery cookies.

The Hack

Add 1-2 tablespoons of cornstarch per batch of cookie dough (along with the flour). Mix as normal and bake as directed.

Why It Works

Cornstarch absorbs moisture during baking, creating a softer, more tender crumb. It also slightly inhibits gluten formation, preventing cookies from becoming chewy/tough.

Pro Tips

  • Works in almost any cookie recipe
  • Also makes brownies fudgier
  • Don't add too much — 1-2 tbsp per batch is plenty
  • Chill the dough 30 minutes before baking for even thicker cookies
