Make Perfect Tea by Watching the Water Temperature

The Problem

Your green tea tastes bitter. Your herbal tea tastes weak. You use boiling water for everything.

The Hack

Black tea: full boiling (212°F). Green tea: 175°F (let kettle sit 2 minutes after boiling). White tea: 160°F. Herbal tea: full boiling. Steep times also vary.

Why It Works

Different tea compounds extract at different temperatures. Green tea's delicate catechins become bitter above 180°F. Black tea's robust tannins need full boiling to release properly.

Pro Tips

  • A simple kitchen thermometer takes the guesswork out
  • Or just count minutes after the kettle boils: 1 min = ~190°F, 3 min = ~175°F
  • Steep black tea 3-5 minutes, green tea 2-3 minutes, herbal 5-7 minutes
  • Pre-warming your mug with hot water keeps tea hot longer
